Introducing The Regency Room Reserve Steak Collection With Certified Angus Beef
ROANOKE, Va. (Dec 10, 2007) - Certified Angus is more than a name. Just 8 percent of beef earns the distinctive "Certified Angus Beef" brand -- and The Regency Room at The Hotel Roanoke and Conference Center is the only restaurant in town serving it as part of The Regency Room Steak Collection.
The cuts of meat are custom-ordered from Performance Food Group in Richmond, the only company in Virginia offering Certified Angus Beef. The Regency Room will offer two All Natural Certified Angus Beef selections with others classified as Certified Angus Beef.
"Certified Angus Beef brand must have medium to fine marbling texture, which allows it to be cooked to higher temperatures and remain juicy," said Billie Raper, executive chef at The Regency Room. "Marbling is the main contributor of beef's juiciness, flavor and tenderness. Certified Angus Beef brand standards exceed those of U.S.D.A. Prime, Choice and Select graded beef."
Performance Food Group offers meat that is 100 percent vegetarian and has never been exposed to antibiotics, hormones, growth promoting drugs or artificial ingredients.
"These steaks go through an aging process that allows for flavor development and produces an extremely tender and juicy steak," said Raper. "The All Natural products are an added bonus and give you an option if you are environmentally conscience about the choices you make when you eat."
Offerings in the new steak collection menu include a 20-oz. Bone-in Ribeye Steak, a 40-Day Aged New York Strip, a 14-oz. Bone-In Filet Mignon and a Slow Roasted Prime Rib with a horseradish sauce.
"I promise an exceptional taste with every bite," said Raper. "We're very excited to introduce this menu and offer our customers something they can't find anywhere else."
